I met Giris about eleven years ago, and have been involved in several of his projects. He was such an inspiration and a master negotiator. I recall one evening eating more white truffle than we should have done in Locanda Locatelli, as the batteries in the weighing scales weren't working. Very few people have had such an effect on me. He was firm but always fair. If he agreed something, his word was 'solid gold’. A man to learn from. Ben Ritson x
